I am after a lemon tree and a plum tree. Thought maybe Meyer and Black Doris – preferably small/minature variety if they exist. Can you please recommend them for me. Also they will be planted about a metre away from the water mains pipe which is plastic and about 1 inch thick. Do you see that this might be a problem.

Meyer lemon is the easiest / most reliable / most popular variety at present. Check with your local store for availability. Black doris is also a popular plum variety, but remember to ensure there is a pollinator close by. Neither of these are dwarf tho. The water pipe may be a problem long term, in that they may move it / shift it as they grow. Initially, the roots will just grow around it, they won’t be able to break into it, but as they fatten up it may be pushed about.
