Like a liquid version of a baked potato, you cannot go wrong with this loaded potato soup.

Ingredients:

  • 6-7 medium potatoes
  • 1 cup onion
  • 3 garlic cloves, crushed
  • 3 cups chicken stock
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1c cup cream
  • 4-6 slices bacon
  • 1/2 cup grated cheese
  • Chives to garnish

Method:

  1. Peel and chop potatoes so they are roughly 3cm cubed in size
  2. Chop onions and garlic and add all veges to a slow cooker
  3. Sprinkle with salt and pepper and pour in the chicken stock
  4. Cover and cook for 3 1/2 hours on high, or 6 hours on low
  5. Cook bacon and chop when cool
  6. Remove 1/3 – 1/2 of the potato chunks and blend with the cream until smooth, return to slow cooker
  7. Stir and cover, cooking for an additional 30 minutes
  8. When ready to serve, garnish with the grated cheese, bacon and chives
