Manuka Lemon Honey

Ingredients

  • 4 lemons
  • 180g butter (unsalted)
  • 250g caster sugar
  • 3 Tbl Manuka honey
  • 3 beaten eggs

Directions

  1. Very finely, pare the rind from the lemon, being careful to avoid the white part
  2. Cut the peeled rind into very fine strips
  3. Squeeze the juice from the lemon and strain
  4. Melt the butter in a large saucepan, add the sugar, lemon juice, finely chopped peel and beaten eggs, stirring continually until the mixture starts to thicken
  5. Stir from time to time until the mixture coats the back of a spoon
  6. Remove from heat and once cooled, place in jars
  7. This is a great product to have in the fridge, use it as a preserve on toasted sourdough, blueberry pancakes with whipped cream and a dollop of lemon honey or just on vanilla ice cream
