Passionfruit Melting Moments

These melt-in-your-mouth tidbits taste so much better when filled with a bright passionfruit butter cream.

Ingredients

  • 250g butter
  • 1/2 cup icing sugar, sifted
  • 1 tsp vanilla essence
  • 2 cups plain flour
  • 1/3 cup cornflour

Icing

  • 60g butter
  • 1 cup icing sugar
  • 3 tsp lemon juice
  • 3 passionfruit

 

Method

  1. Preheat oven to 170C. Cream the butter and the icing sugar with the vanilla until pale. Sift the flour and cornflour together then mix with the creamed mixture until well combined.
  2. Roll into small balls and place on greased oven trays, pressing down with a fork or the mixture can be piped. Bake for about 15 minutes or until pale golden.
  3. Beat the icing ingredients together well then use to sandwich together the cold biscuits. Dust with icing sugar.
