We brought an apple tree in April and now the leaves have gone. It is a Royal Gala/Braeburn variety. Do we need to graft and what is the best method for this if required. Also what are the best vegetables for growing in winter.

You do not need to graft anything onto the tree. The leaves have dropped as apples are deciduous – it will grow new ones in spring. Have a look at the Gardening Calendars on the website for winter vege growing information.
