I have espaliered apple trees which have what looks like cotton wool on parts of the main branches (not tips of branches) when I wipe this off with my fingers there seems to be brown granules or maybe they are small insects at the base of the fluff – what is this and what do you recomend as the best spray.

It sounds like a mealy bug infestation. You need to spray with Conqueror oil / Orthene.
