When and how do I go about pruning Nashi pears?

They are pruned in winter when they are dormant. They can be trained as center leader trees the same way as an apple tree or espaliered. Nashi fruit on spurs (compact, stubby growth made up of a mass of fruit buds) on 2 year old wood. These spurs are thinned out on older trees and new growth is then encouraged to spur up as new fruiting wood.
