Fruit trees should be pruned right now as the trees are dormant. How it should be pruned depends a little on if this has been done every year. If it has been pruned every year then just remove some of the excess new growth that it would have produced. Try to stick to the shape of the tree but allow as much airflow through as possible. Plums fruit on last year’s growth. If a tree hasn’t been trimmed for a number of years, than it might need a really heavy prune which will affect the volume of fruit for the coming year as you will be pruning a lot of the fruiting wood off. In this case it will take several years to get this back to an acceptable shape, as plum trees respond with lots of new growth when pruned heavily you would need to control this with some summer pruning.
With regards to the flowering cherry, we would suggest waiting until it has finished flowering then immediately prune it as hard as you want too, remembering the harder you prune it the more it regrows so it’s important to get the balance right.
