I have got mad rhubarb in my garden – planted almost a year ago, when is best time to start harvesting it? do the stems have to be red and how can i help it through the winter?

The stems do not have to be red to be eaten, but are more attractive – redness seems to occur more frequently in cooler areas. You can start picking when the stems are around 30cm long. Rhubarb can tolerate cold temperatures. Covering it with a cloche will produce more tender stems.
