Start by preparing the soil by digging in organic matter, some Blood & Bone and some Sulphate of Potash. Plant the tubers before the end of winter and remember to protect the young shoots as they emerge with slug and snail bait. Jerusalem artichokes are related to sunflowers and grow to about two metres tall. In late summer the plants are topped with bright yellow flowers – at the same time as the knobbly chokes are growing underground. In autumn the plants begin to die back and when theyre completely brown harvesting starts. Dig under the base of the plants with your hands and pull out the tubers they look a bit like knotted potatoes. Ask your local Palmers store for tubers to plant.
