Why do Beetroot plants not produce full size beet is something missing from the soil?

Beetroot are sensitive to soil acidity, so a little lime should be added before planting. Any nutrient deficiency is likely to be as a result of too much lime. They like to be kept moist, but not overwet as that can cause more leaves to grow at the expense of the roots. However, smaller roots are more tender and taste better than large ones.
