Broccoli is a crop that is often affected by the change in temperatures that can occur with the changing of the seasons. Broccoli also does better in the cooler months when the soil temperature has cooled down.
The best things you can do is to make sure there is mulch around the plants to keep the soil cooler and the moisture in, also watering frequently from seedling stage until you are ready to harvest.
Covering your plants when it is a bit warmer with covers is also a good way to prevent the bolting to seed happening.
