Ingredients
- Melted butter, to grease
- 2 cups self-raising flour
- 1/2 cup caster sugar
- 1/2 cup desiccated coconut
- 1 tbsp finely grated lime rind
- 90g butter, melted
- 1 egg
- 3 kiwifruit, peeled, thinly sliced crossways
- 1/2 cup shredded coconut
- Icing sugar, to dust
Directions
- Preheat oven to 200 degrees. Lightly brush muffin tin with melted butter to grease.
- Combine the flour, sugar, desiccated coconut and lime rind in a large bowl. Whisk together in another bowl the butter and egg then add to the flour mixture and stir until just combined.
- Spoon the mixture among the lightly greased muffin tin. Top with kiwifruit and sprinkle with shredded coconut. Bake in the oven for 20-25 minutes or until a skewer inserted into the centers comes out clean. Turn out onto a wire rack to cool.
- Dust with icing sugar to serve.
